This winter, Marble Cape Town is bringing warmth, flavour and a vibrant celebration of South African culture to the V&A Waterfront with the launch of its new Seven Colour Sundays Brunch series. Known for its elegant rooftop setting, harbour views and signature live-fire cooking, Marble Cape Town is inviting guests to embrace the slower pace of winter weekends with a brunch experience inspired by one of South Africa’s most cherished culinary traditions. Launching on 5 July and running every Sunday until 16 August, Seven Colour Sundays Brunch promises a colourful journey through food, music, creativity and local culture.



A Celebration of a South African Tradition
The concept takes inspiration from the much-loved South African tradition of the “7 Colours” Sunday meal. Found at family gatherings and celebrations across the country, these meals are known for their vibrant variety of dishes, colours and flavours that come together around the table.
At Marble Cape Town, this nostalgic tradition has been reimagined through the restaurant’s distinctive culinary approach, combining premium local ingredients with the theatre and flavour of open-fire cooking.
“Seven Colour Sundays Brunch is our way of taking a much-loved South African food tradition and expressing it through the Marble lens – cooking with fire, celebrating bold flavour, and, here in Cape Town, drawing on the incredible produce and sense of place that make the local food culture so special.” – Chef David Higgs.
The result is an elevated brunch experience that honours familiar flavours while introducing contemporary techniques and refined presentation.


Showcasing Local Creativity
Adding another layer of creativity to the series, each Sunday brunch is themed around a specific colour. The colour themes serve as inspiration not only for the food and atmosphere but also for collaborations with local artists and makers.
In partnership with the iconic V&A Waterfront and its creative retail marketplace, The Watershed, Marble Cape Town is using the brunch series as a platform to celebrate local craftsmanship and design.
Products and artworks created by participating artisans are featured throughout the campaign’s creative elements, helping to bring each colour theme to life. On the corresponding Sundays, guests will also have the opportunity to view and purchase selected products from the featured makers, creating a meaningful connection between food, art and community.
This collaboration reinforces Marble’s commitment to showcasing South African talent while offering diners a richer cultural experience beyond the plate.

- 12 July – Red: Zizamele
- 19 July – Green: Cool Tabs & Afrographic Studio
- 26 July – Yellow: Beloved Beadwork & Afrographic Studio
- 2 August – Pink: Mia Mélange
- 9 August – Purple: Project Dyad
- 16 August – Orange: Wild Skins
The colour themes bring a fresh visual identity to each event, ensuring that every Sunday offers a unique experience for returning guests.


A Generous Brunch Menu Designed for Sharing
The Seven Colour Sundays Brunch menu has been carefully designed to encourage connection and celebration around the table. Guests begin their experience with an individual arrival canapé, followed by three chef-selected snacks served for sharing. The meal continues with a generous shared main course accompanied by a variety of sides inspired by the traditional “7 Colours” concept. For dessert, guests can choose between two individual sweet options before finishing with a final indulgent treat. Dietary requirements and allergies will be accommodated wherever possible, ensuring that all guests can enjoy the experience.
“We’ve taken everything people love about Seven Colour Sundays and reimagined it for brunch – lighter, brighter and perfectly suited to long, lazy winter days at the Waterfront,” says Head Chef Matt van Niekerk. “It’s still the flavours South Africans know, but with a fresh energy, a little luxury and our Marble twist.”



Special Touches
Adding to the sense of occasion, every guest will receive a complimentary glass of Colmant MCC Brut on arrival. Couples will also receive a tasting voucher for a future visit to Colmant, extending the celebration beyond brunch itself.
Brunch service begins at 11:00, with the final seating at 14:00 and the kitchen closing at 15:00. The experience is priced at R795 per adult and R195 per child, excluding beverages. A R100 deposit per person is required to secure a reservation. Bookings are recommended, although walk-ins will be accommodated where space allows.
