A culinary journey inspired by fire
Since its formation in 2016, Marble has indeed become a pillar of South Africa’s diverse and bold food culture.. The co-founders Chef David Higgs and entrepreneur Gary Kyriacou have now introduced their fire-focused philosophy to Cape Town, blending it with local seafood traditions.. Head Chef Matt van Niekerk expressed his passion by stating that ““The concept of live-fire cooking may not be new anymore, but the way we do it at Marble is always a fresh experience. That’s what excites us about Cape Town.” Fire has a way of bringing people together—it’s where stories are shared, ideas come to life, and connections are made.”
Marble Cape Town’s menu is centred around the iconic Grillworks, delivering vibrant flavours through fire. Guests can enjoy starters like snoek pâté and lamb tartare, as well as indulge in the main courses like wood-fired Chalmar ribeye and mussel paella.
““One of the things I love most is how vegetables transform over fire,” stated Chef David Higgs. “They develop a complexity and character you can’t achieve any other way.” One of the highlights features roasted pumpkin with candied walnuts and burnt honey dressing. For dessert, guests can enjoy a selection from cheese, biscuits, and pickles curated by Karen Dudley to key lime pie and the whimsical Cape Town granadilla lollly.

Stunning design inspired by the Mother City
Nestled in the historic Union Castle building, the 800m² space features designs by Irene Kyriacou, showcasing Cape Town’s natural elements.
“The space evolves throughout the day,” stated Irene.. Whether for lunch, sundowners, or dinner, the design adapts to Cape Town’s weather, from stormy days to vibrant sunsets. The outdoor terrace makes the dining and bar area beautiful.
Art is important to Marble, featuring local-inspired pieces by GRID, Krisjan Rossouw, and a crystal bead installation by Mash.T.
Moreover, a distinctive stainless-steel ceiling mimics water reflections, complemented by Casamento’s hand-stitched upholstery, blending tradition and modernity.
