A Taste of Luxury: Wilde Vy Bistro Launches in Durbanville

Towards the end of January, In Cape Town the beautiful Durbanville wine route is set to welcome an exciting new culinary destination. Wilde Vy Bistro. Nestled on the historic Hooggelegen Farm, home to Signal Gun Wines, this bistro not only promises to be a feast for the senses but also invites guests to experience its unique culinary offerings when it opens its doors on Thursday, 23 January.

A Collaborative Vision

Well-known South African chef Jürgen Snyman and Ghanaian entrepreneurs Kwasi Osei-Kusi and Charles Bucknor, based in Accra, created Wilde Vy Bistro.. The trio first met in Cape Town during Snyman’s tenure as Executive Chef at Kloof Street House, Asoka, and the Egghead restaurant group.

Due to that they shared commitment to a client-focused approach to hospitality has driven them to create a venue that not only serves divine food but also nurtures the talents of its staff. Osei-Kusi and Bucknor invest in annual training for their team in Cape Town, with the guidance of esteemed restaurateurs Liam Tomlin and Ivor Jones.

In June 2024, an opportunity arose for Snyman to join forces with Osei-Kusi and Bucknor at Hooggelegen Farm, igniting the concept for Wilde Vy Bistro.

The Design Narrative

To bring their vision to life, the trio enlisted their knowledge of Design Build Collective (DB-CO), who crafted an interior design that pays homage to the rich heritage of Hooggelegen Farm. The transformation of the previous restaurant space reflects the careful process of wine production and is the epitome of patience as well as the timeless beauty of the six-generation farm.

DB-CO’s design harmonizes with the surrounding landscape by utilizing organic materials such as wood, rustic bricks, and sleek concrete. It also has contemporary touches of marble and brass provide a modern flair. This well-thought-out approach ensures that Wilde Vy Bistro is not just a restaurant, but rather ian experience that resonates with the history of its location.

Culinary Delights Await

The team at Wilde Vy Bistro thoughtfully curated the menu to cater to a variety of tastes and preferences, ensuring that every guest finds something to savor. They divided the menu into sections, including SMALL PLATES (Happies), RAW, SALADS, SEA, FIRE GRILL, VEGETARIAN, SIDES, DESSERT, and a dedicated KIDDIES MENU, designing the selection to entice and cater to diverse tastes.

Highlights from the menu include:

  • SMALL PLATES (Happies): Duck Liver Parfait with Brioche and Cherry Granola
  • RAW: Citrus Cured Overberg Trout with Ajo Blanco, Apple, and Cucumber
  • SEA: Line Fish accompanied by Braaied Bok Choi, Mussels, and Tikka Masala
  • FIRE GRILL: Côte de Boeuf served with Smoked Aubergine, Black Garlic, and Steak Sauce

DESSERT: Finally, indulge in a decadent Chocolate, Passion Fruit, and Granola creation that promises to delight even the most steadfast non-sweet tooth.
